Ingredients
1 5 to 6-pound beef brisket
2 tablespoons brown sugar
2 teaspoons smoked paprika
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon chili powder
1 ½ teaspoons salt
1 teaspoon black pepper
1 tablespoon olive oil
1 cup beef broth
1 tablespoon Worcestershire sauce
2 tablespoons apple cider vinegar
¾ cup ketchup or tomato paste
1 teaspoon liquid smoke (optional)
Instructions
1. Preheat oven to 300°F (150°C).
2. In a small bowl, mix brown sugar, smoked paprika, garlic powder, onion powder, chili powder, salt, and black pepper.
3. Rub brisket with olive oil, then coat evenly with the spice rub.
4. Place brisket in a large roasting pan or Dutch oven. Pour beef broth and Worcestershire sauce around (not over) the meat.
5. Cover tightly with foil or a lid and bake for 3.5 to 4 hours.
6. Meanwhile, combine ketchup, vinegar, liquid smoke (if using), and a tablespoon of the pan drippings to make the barbecue sauce. Simmer until slightly thickened.
7. Uncover brisket and generously brush with the barbecue sauce. Increase oven to 375°F and roast uncovered for another 30 minutes.
8. Let the brisket rest for 15 minutes before slicing against the grain. Serve with extra sauce.
Notes
Let the brisket rest before slicing to lock in juices.
Use a meat thermometer to ensure internal temperature reaches at least 190°F for shreddable texture.
