Ingredients
1 12 oz ribeye or New York strip steak
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon olive oil
2 tablespoons butter, divided
4 garlic cloves, minced
1 cup heavy cream
2 tablespoons grated Parmesan cheese (optional)
1 tablespoon chopped parsley or thyme for garnish
Instructions
1. Let the steak come to room temperature for 20–30 minutes. Pat dry and season with salt and pepper.
2. Heat olive oil in a cast iron skillet over medium-high heat. Sear the steak for 3–4 minutes per side for medium-rare. Add 1 tablespoon of butter and baste the steak. Remove and rest.
3. In the same skillet, add the remaining butter and garlic. Sauté until fragrant.
