Ingredients

1 cup cottage cheese

2 large eggs

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon black pepper

1/2 cup sugar-free pizza sauce

1 1/2 cups shredded mozzarella cheese

1/4 teaspoon red pepper flakes

1 teaspoon fresh thyme or parsley


Instructions

1. Preheat the oven to 400°F and line a baking sheet or pizza pan with parchment paper.

2. Add the cottage cheese, eggs, Parmesan cheese, Italian seasoning, garlic powder, salt, and black pepper to a blender or food processor. Blend until mostly smooth.

3. Pour the mixture onto the prepared pan and spread it into an even round about 1/4 inch thick.

4. Bake for 25 minutes, or until the crust looks set and lightly golden around the edges.

5. Remove the crust from the oven and spread the sugar-free pizza sauce evenly over the top.

6. Sprinkle on the mozzarella cheese, then add the red pepper flakes if using.

7. Return the pizza to the oven and bake for 8 minutes, or until the cheese is melted and bubbly.

8. Let it rest for 5 minutes, then finish with fresh thyme or parsley, slice, and serve.

Notes

Do not spread the crust mixture too thick, or the center may stay soft and not firm up enough for clean slices.
