Ingredients
1 pound ground pork
2 cloves garlic, minced
1 tablespoon ginger, grated
2 tablespoons soy sauce
1 tablespoon gochujang
1 tablespoon brown sugar
1 egg
1/4 cup breadcrumbs
4 baguette rolls
1/2 cup mayonnaise
1/2 cup pickled carrots and daikon
1 jalapeño, sliced
1/4 cup fresh cilantro leaves
1 tablespoon gochujang (for glaze)
1 tablespoon soy sauce (for glaze)
1 teaspoon brown sugar (for glaze)
Instructions
1. In a bowl, mix ground pork, garlic, ginger, soy sauce, gochujang, brown sugar, egg, and breadcrumbs. Form into meatballs.
2. Bake meatballs at 400°F for 18–20 minutes or pan-fry until golden and cooked through.
3. In a pan, heat gochujang, soy sauce, and brown sugar until bubbly. Toss meatballs to glaze.
4. Split and lightly toast baguette rolls.
5. Spread mayo on both sides of baguette.
6. Layer pickled carrots and daikon, glazed meatballs, sliced jalapeños, and cilantro.
7. Serve warm immediately and enjoy!
Notes
Use pork for juiciest results, but turkey or beef works well too.
