Ingredients
For the Chicken:
1 lb boneless, skinless chicken breast or thighs, cut into bite-sized chunks
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp garlic powder
2 tbsp olive oil
For the Sauce & Pasta:
12 oz linguine pasta
4 tbsp unsalted butter
4 cloves garlic, finely minced
Juice and zest of 1 lemon
1/4 cup chicken broth or reserved pasta water
1/4 cup grated Parmesan (plus more for topping)
2 tbsp fresh chopped parsley (plus more for garnish)
Lemon wedges for serving (optional)
Instructions
- Cook the linguine in salted boiling water according to package instructions. Reserve 1/2 cup of pasta water, then drain.
- Season chicken pieces with salt, pepper, paprika, and garlic powder. Toss to coat.
- Heat olive oil in a skillet over medium-high. Sear chicken 3–4 minutes per side until golden and cooked through. Remove and set aside.
- Lower heat to medium. In the same skillet, melt butter. Add garlic and sauté 1 minute.
- Stir in lemon juice, zest, and broth/pasta water. Simmer 2–3 minutes.
- Return chicken to skillet, coat in sauce. Add cooked linguine and toss everything together.
- Sprinkle in Parmesan and parsley. Toss again to combine.
