Ingredients

For the Chicken:

1 lb boneless, skinless chicken breast or thighs, cut into bite-sized chunks

1 tsp salt

1/2 tsp black pepper

1/2 tsp paprika

1/2 tsp garlic powder

2 tbsp olive oil

For the Sauce & Pasta:

12 oz linguine pasta

4 tbsp unsalted butter

4 cloves garlic, finely minced

Juice and zest of 1 lemon

1/4 cup chicken broth or reserved pasta water

1/4 cup grated Parmesan (plus more for topping)

2 tbsp fresh chopped parsley (plus more for garnish)

Lemon wedges for serving (optional)


Instructions

  1. Cook the linguine in salted boiling water according to package instructions. Reserve 1/2 cup of pasta water, then drain.
  2. Season chicken pieces with salt, pepper, paprika, and garlic powder. Toss to coat.
  3. Heat olive oil in a skillet over medium-high. Sear chicken 3–4 minutes per side until golden and cooked through. Remove and set aside.
  4. Lower heat to medium. In the same skillet, melt butter. Add garlic and sauté 1 minute.
  5. Stir in lemon juice, zest, and broth/pasta water. Simmer 2–3 minutes.
  6. Return chicken to skillet, coat in sauce. Add cooked linguine and toss everything together.
  7. Sprinkle in Parmesan and parsley. Toss again to combine.
  8. Serve with more Parmesan, parsley, and lemon wedges if desired.
