Ingredients
For the Dough:
3 1/2 cups all-purpose flour
1 packet (2 1/4 tsp) active dry yeast
1/2 cup warm milk (110°F)
1/4 cup granulated sugar
1/4 cup unsalted butter, melted
1/2 tsp salt
2 eggs
For the Filling:
1/2 cup granulated sugar
Zest of 2 lemons
1/4 cup unsalted butter, softened
For the Frosting:
4 oz cream cheese, softened
2 tbsp unsalted butter, softened
1 cup powdered sugar
2 tbsp fresh lemon juice
Zest of 1 lemon (for garnish)
Instructions
- In a small bowl, dissolve yeast in warm milk and let it sit until foamy (about 5-10 minutes).
- In a large bowl, combine flour, sugar, and salt. Whisk eggs and melted butter in a separate bowl.
- Add yeast mixture and egg mixture to the dry ingredients. Mix until a soft dough forms.
- Knead the dough on a floured surface for 8–10 minutes until smooth. Place in a greased bowl and cover. Let rise for 1–1.5 hours until doubled.
- Mix sugar and lemon zest for the filling, then blend in softened butter.
- Roll dough into a 10×15 inch rectangle. Spread filling evenly. Roll tightly and slice into 12 rolls.
- Place rolls in a greased 9×13 pan. Cover and let rise again for 30–45 minutes.
- Bake at 350°F for 20–25 minutes until golden. Let cool slightly.
- Beat cream cheese and butter, then mix in powdered sugar and lemon juice. Frost warm rolls and top with lemon zest.
