Ingredients

6 large egg whites

1 cup granulated sugar

1/2 teaspoon cream of tartar

1/2 cup cake flour

1/2 teaspoon baking powder

2 large whole eggs

1 cup heavy whipping cream

3 tablespoons powdered sugar

1 teaspoon vanilla extract

Fresh berries (optional, for garnish)

Powdered sugar (for dusting)


Instructions

1. Beat the egg whites with cream of tartar until soft peaks form.

2. Gradually add granulated sugar, continuing to beat until stiff peaks appear.

3. In a separate bowl, whisk whole eggs with vanilla.

4. Gently fold in the egg mixture and sifted cake flour with baking powder into the egg whites.

5. Pour the batter into a lined round cake tin.

6. Bake at 325°F (165°C) for 30-35 minutes, until golden and springy.

7. Let cool completely, then hollow out the center gently.

8. Whip heavy cream with powdered sugar and vanilla until stiff.

9. Fill the center with whipped cream and smooth the top.

10. Dust with powdered sugar and garnish with berries.

Notes

Make sure egg whites are at room temperature for best volume.

Do not overmix when folding the batter to maintain fluffiness.
