Ingredients
4 large russet potatoes

1/2 pound shrimp, peeled, deveined, and chopped

2 tablespoons chopped green onions

Instructions
1. Preheat the oven to 400°F. Scrub the potatoes, dry them well, rub them with olive oil, and season with salt and black pepper. Place them on a baking sheet and bake for 50 to 60 minutes, or until fork tender.
2. Let the potatoes cool slightly until safe to handle. Slice each potato lengthwise and carefully scoop out the centers, leaving a thin border so the skins hold their shape.
