Ingredients
500g ground beef
1 cup breadcrumbs
2 eggs
1 small onion, finely chopped
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
2 cups mashed potatoes
1 1/2 cups shredded cheddar cheese
1/3 cup cooked bacon bits
2 tablespoons chopped chives or parsley
Instructions
1. Combine ground beef, breadcrumbs, eggs, onion, garlic, Worcestershire sauce, salt, and pepper in a mixing bowl. Mix until just combined.
2. Shape the mixture into a loaf on a baking tray or press it into a loaf pan.
3. Bake at 375°F (190°C) for 35–40 minutes.
4. While baking, prepare mashed potatoes until smooth and creamy.
5. Remove meatloaf from oven. Spread mashed potatoes on top, then add shredded cheddar and bacon bits.
6. Return to oven and bake for another 15 minutes until cheese is melted and golden.
7. Let it rest for 5–10 minutes. Garnish with chives or parsley before slicing.
Notes
For extra creamy mashed potatoes, use warm milk and butter during mashing.
You can prepare the meatloaf base in advance and refrigerate overnight for easier assembly.
