Ingredients
9 lasagna noodles, cooked
1 zucchini, chopped
1 yellow squash, chopped
1 red bell pepper, diced
1 yellow bell pepper, diced
2 carrots, peeled and diced
1 cup mushrooms, sliced
2 cups spinach, fresh
1 cup ricotta cheese
2 cups shredded mozzarella cheese
0.75 cup grated parmesan cheese
3 tablespoons butter
3 tablespoons all-purpose flour
3 cups milk
1 small onion, finely chopped
3 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon Italian seasoning
0.5 teaspoon salt
0.5 teaspoon black pepper
0.25 teaspoon ground nutmeg (optional)
Instructions
1. Preheat oven to 400°F and toss zucchini, squash, peppers, carrots, and mushrooms with olive oil, salt, pepper, and Italian seasoning. Roast for 20-25 minutes until tender.
2. In a saucepan, melt butter and sauté garlic and onion. Stir in flour and cook for 2 minutes. Gradually whisk in milk, stirring until thick. Season with salt, pepper, and nutmeg.
3. Cook lasagna noodles per package directions. Lay them flat on parchment paper to avoid sticking.
