Ingredients
2 tablespoons olive oil
1 small onion, diced
3 cloves garlic, minced
1 teaspoon Italian seasoning
1 pinch crushed red pepper flakes
4 cups chicken broth
2 cups cooked chicken breast, shredded
1 cup heavy cream
0.5 cup grated Parmesan cheese
16 ounces gnocchi
1 cup fresh spinach
0.5 cup sun-dried tomatoes, chopped
Salt and black pepper, to taste
Instructions
1. Heat olive oil in a large soup pot over medium heat. Add diced onion and sauté until translucent.
2. Stir in garlic and cook until fragrant.
3. Add sun-dried tomatoes, Italian seasoning, and crushed red pepper flakes. Cook for 1 minute.
4. Pour in chicken broth and bring to a simmer. Add shredded chicken.
5. Lower the heat and stir in heavy cream and Parmesan cheese until melted.
6. Add gnocchi and cook for 2–3 minutes or until they float to the top.
7. Stir in spinach and let it wilt.
8. Season with salt and pepper to taste. Serve hot.
Notes
Don’t overcook the gnocchi or they’ll become mushy—once they float, they’re done.
For a richer flavor, try adding a splash of white wine before the broth.
