Ingredients
1 pound large shrimp, peeled and deveined
8 ounces fettuccine pasta
3 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped
1 cup heavy cream
1/2 cup freshly grated Parmesan cheese
1/2 teaspoon crushed red pepper flakes
1/2 cup chicken broth
2 tablespoons olive oil
2 tablespoons butter
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh parsley, chopped
Instructions
1. Heat olive oil and butter in a large skillet over medium heat.
2. Add shrimp, season with salt and pepper, and cook for 2 minutes per side until pink. Remove and set aside.
3. Add garlic to the skillet and cook until fragrant.
4. Stir in sun-dried tomatoes and red pepper flakes; sauté briefly.
5. Pour in chicken broth and stir to deglaze the pan.
6. Add heavy cream and bring to a simmer.
7. Stir in Parmesan cheese until melted and smooth.
8. Meanwhile, cook the fettuccine in salted boiling water until al dente; reserve 1/2 cup pasta water.
9. Add drained pasta to the skillet and toss in the sauce, using pasta water if needed.
10. Return shrimp to the skillet and stir everything together.
11. Garnish with fresh parsley and serve immediately.
Notes
Don’t overcook the shrimp—they should just turn pink and firm.
Freshly grated Parmesan melts better and tastes richer than pre-shredded.
