Ingredients

4 ounces feta cheese

4 large eggs

1 cup cherry tomatoes

1 cup fresh spinach

1 tablespoon olive oil

2 cloves garlic, minced

1/4 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon chopped fresh parsley or basil (for garnish)


Instructions

1. Preheat oven to 375°F (190°C) and lightly grease 4 ramekins with olive oil.
