Ingredients

1 lb ground beef (80/20)

1 cup breadcrumbs

1/2 cup milk

1/2 cup grated parmesan cheese

2 large eggs

2 tablespoons fresh parsley, chopped

2 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil (for browning)

3 cups crushed tomatoes or marinara sauce


Instructions

1. In a large bowl, combine breadcrumbs and milk. Let sit for 5 minutes to soften.

2. Add ground beef, eggs, parmesan, garlic, parsley, Italian seasoning, salt, and pepper to the breadcrumb mixture.

3. Mix gently with hands until just combined—do not overmix.

4. Roll mixture into 2-tablespoon-sized balls and set on a tray.

5. Heat olive oil in a skillet over medium heat and brown meatballs on all sides.

6. Transfer browned meatballs to a pot with simmering sauce.

7. Cover and simmer on low heat for 25–30 minutes until fully cooked.

8. Serve over pasta or polenta, topped with extra parmesan and parsley.

Notes
