Ingredients

1 lb ground beef

1 can Rotel tomatoes with green chiles

8 oz Velveeta cheese

4 oz cream cheese

1 packet taco seasoning

1 cup shredded cheddar cheese

1 small onion, chopped (optional)

2 cups crushed tortilla chips or 2 cups frozen tater tots (optional base)


Instructions

1. In a large skillet over medium heat, cook the ground beef until no longer pink. Add chopped onions if using and cook until soft. Drain excess grease.

2. Stir in taco seasoning until the beef is evenly coated. Add Rotel tomatoes and simmer for 2–3 minutes.

3. Lower the heat and add Velveeta and cream cheese. Stir until melted and fully incorporated.

4. Lightly grease a 9×13″ baking dish. Add crushed tortilla chips or tater tots as the base layer if using.

5. Pour the beef mixture over the base and spread evenly. Top with shredded cheddar cheese.

6. Bake at 375°F for 15–20 minutes until cheese is bubbly and golden.

Notes
