Ingredients

1 ¾ cups all-purpose flour

¾ cup Dutch-process cocoa powder

1 ½ teaspoons baking soda

½ teaspoon baking powder

1 teaspoon salt

1 ¾ cups granulated sugar

½ cup brown sugar

2 large eggs

1 cup buttermilk

1 cup brewed coffee

½ cup vegetable oil

1 tablespoon vanilla extract

8 oz bittersweet chocolate (for frosting and ganache)

1 cup heavy cream (for ganache)


Instructions

1. Grease and line three 8-inch cake pans with parchment paper. Preheat oven to 350°F (175°C).

2. In a large bowl, sift together flour, cocoa, baking soda, baking powder, and salt.

3. In another bowl, whisk sugars, eggs, buttermilk, coffee, oil, and vanilla until smooth.

4. Gradually mix dry ingredients into wet mixture, whisking until smooth and lump-free.

5. Divide batter into pans and bake for 28–32 minutes, until a toothpick comes out clean.

6. Let cakes cool 10 minutes in pans, then transfer to wire racks to cool completely.

7. Melt 4 oz of bittersweet chocolate with ¼ cup cream. Add powdered sugar and chill to make fudge frosting.

8. Assemble cake by layering with fudge frosting between each layer and smoothing sides.

9. Warm remaining ½ cup cream and pour over 4 oz chopped chocolate. Stir into ganache and glaze the cake.

Notes

For maximum flavor, use a blend of Dutch-process and black cocoa powder.

Let the cake sit at room temperature for 20 minutes before serving for the best texture.
