Ingredients

1 ½ cups all-purpose flour

2 teaspoons baking powder

¼ teaspoon salt

1 tablespoon lemon zest

1 cup granulated sugar

3 large eggs

1 cup plain Greek yogurt

½ cup vegetable oil

¼ cup fresh lemon juice

1 teaspoon vanilla extract


Instructions

5. Fold dry ingredients into wet ingredients until just combined.

6. Pour into loaf pan and bake for 45–50 minutes, or until a toothpick comes out clean.

7. Let cool for 10 minutes in the pan, then transfer to a wire rack.

8. Once cooled, dust with powdered sugar if desired.

Notes

Don’t overmix the batter to keep the texture soft and fluffy.
