Ingredients

12 oz lo mein noodles

1 lb ground beef

3 tbsp soy sauce

3 tbsp hoisin sauce

2 tbsp brown sugar

1 tbsp cornstarch

2 tbsp water (for slurry)

3 cloves garlic, minced

1 tbsp fresh ginger, minced

1 red bell pepper, chopped

1 green bell pepper, chopped

4 green onions, sliced

1 tbsp oil (vegetable or sesame)

Instructions

1. Bring a large pot of water to a boil and cook lo mein noodles according to package instructions. Drain and set aside.

2. In a large skillet, cook ground beef over medium-high heat until browned. Drain excess fat.

3. Push beef to one side, add oil, garlic, and ginger. Sauté for 30 seconds until fragrant.

4. Add red and green bell peppers. Cook for 3–4 minutes until slightly tender.

5. In a small bowl, mix soy sauce, hoisin sauce, brown sugar, and water. Add to skillet and stir.

6. Mix cornstarch with water to create a slurry. Add to skillet to thicken the sauce.

7. Toss in cooked noodles and green onions. Stir everything until coated and glossy.

8. Serve hot and enjoy immediately.

Notes

Use fresh lo mein or yakisoba noodles for best texture, but dry noodles work fine too.

Add a splash of water when reheating to bring back the glossy sauce.
