Ingredients

1 cup unsalted butter, softened

2/3 cup granulated sugar (plus more for rolling)

1 egg yolk

1 teaspoon vanilla extract

2 1/4 cups all-purpose flour

6 ounces cream cheese, softened

1/2 cup powdered sugar

1/2 teaspoon vanilla extract

Instructions

1. In a large bowl, cream together the butter and granulated sugar until light and fluffy.

2. Add egg yolk and vanilla extract, mixing well.

3. Gradually add the flour and mix until a soft dough forms.

4. Roll dough into tablespoon-sized balls and coat each ball in granulated sugar.

5. Press your thumb into the center of each ball to create a well.

6. Chill the shaped cookies for 30 minutes.

7. In another bowl, beat the cream cheese, powdered sugar, and vanilla until smooth.

8. Preheat oven to 350°F (175°C). Fill the center of each cookie with cheesecake filling.

9. Bake for 12–14 minutes, or until edges are lightly golden.

10. Let cookies cool completely before serving or storing.

Notes

Make sure the cream cheese is room temperature to prevent lumps in the filling.

Chill the cookie dough balls to maintain shape and prevent spreading during baking.
