Ingredients

5 large russet potatoes

4 tablespoons unsalted butter

1 cup sour cream

4 ounces cream cheese

1/2 cup whole milk or heavy cream

2 cups shredded cheddar cheese

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons chopped chives or green onions (optional)


Instructions

1. Peel and chop the potatoes into chunks. Boil in salted water until fork-tender, about 15–20 minutes.

2. Drain and mash the potatoes while still hot.

5. Spread half the mashed potatoes into a greased baking dish.

6. Sprinkle 1 cup of shredded cheese over the layer.
