Ingredients

2 1/4 teaspoons active dry yeast (1 packet)

1 1/2 cups warm water (110°F)

1 tablespoon granulated sugar

1 teaspoon salt

4 cups all-purpose flour

2 tablespoons unsalted butter, melted

8 mozzarella cheese sticks (cut in half if desired)

1/2 cup baking soda

4 cups water (for baking soda bath)

1 large egg (beaten, for egg wash)

Coarse salt, for sprinkling

Optional: dried herbs (oregano or parsley) for garnish


Instructions

  1. In a mixing bowl, stir together warm water, sugar, and yeast. Let sit for 5 minutes until frothy.
  2. Add salt and melted butter. Gradually mix in flour until a dough forms. Knead 6–7 minutes until smooth.
  3. Let the dough rise in a greased bowl for 1 hour until doubled in size.
  4. Divide dough into 8 pieces. Roll into ropes, flatten, and place a mozzarella stick inside. Seal dough around cheese and shape into pretzels.
  5. Simmer water with baking soda. Dip each pretzel in for 30 seconds. Remove and place on lined baking sheet.
  6. Brush with beaten egg. Sprinkle with salt and herbs.
  7. Bake at 425°F for 12–15 minutes until golden brown. Cool slightly and serve.
