Ingredients
3 tablespoons butter
1 pound ground beef (80/20)
2 large yellow onions, thinly sliced
4 slices American cheese
4 burger buns
1 teaspoon salt
1 teaspoon black pepper
Instructions
1. Slice onions paper-thin and toss with a pinch of salt. Let them sit for 10 minutes.
2. Form the ground beef into four loose 4 oz balls without packing tightly.
3. Heat a cast iron skillet over medium-high and add butter.
4. Place a beef ball on the skillet, top with a mound of onions, and smash flat with a spatula.
5. Season with salt and pepper. Let cook for 2-3 minutes until the onions are golden.
6. Flip carefully, top with cheese, and cook another minute.
7. Toast burger buns in the same skillet or with extra butter.
8. Assemble burgers and serve hot.
Notes
Use a mandoline for consistent, paper-thin onions.
For extra crisp, pat onions dry before smashing into the patties.
