1 small onion, diced
2 cloves garlic, minced
1 pound lean ground beef
2 cups diced tomatoes (with juice)
2 cups pasta shells (dry)
2 to 2.5 cups water or broth
3 cups fresh spinach
1 teaspoon salt
0.5 teaspoon black pepper
Instructions
1. Heat olive oil in a large skillet over medium heat. Add diced onion and sauté for 3-4 minutes until soft.
2. Stir in garlic and cook for 30 seconds until fragrant.
3. Add ground beef, cook and crumble until browned. Drain excess fat if necessary. Season with salt and pepper.
