1.5 lbs boneless, skinless chicken thighs or breasts, cut into chunks
2 tablespoons olive oil
2 large yellow onions, thinly sliced
1 tablespoon unsalted butter
1 teaspoon sugar
2 garlic cloves, minced
1 teaspoon dried thyme
1/2 teaspoon dried oregano
Salt and black pepper, to taste
1 cup uncooked white rice (long grain or jasmine)
2 cups beef broth
1 cup shredded Gruyère or Swiss cheese (optional)
Fresh chopped parsley, for garnish
Instructions
- In a large skillet, heat olive oil and butter over medium heat. Add onions, salt, and sugar. Cook for 20-25 minutes, stirring often until caramelized.
