Ingredients

2 tablespoons olive oil

2 large onions, thinly sliced

4 boneless, skinless chicken breasts or thighs

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried thyme (or fresh)

2 cloves garlic, minced

1 cup long grain white rice

2 cups beef or chicken broth (low sodium)

1 tablespoon Worcestershire sauce

1 cup shredded Gruyère or Swiss cheese (optional)

Fresh chopped parsley, for garnish


Instructions

  1. Heat olive oil in a deep skillet or Dutch oven over medium-low heat.
  2. Add onions and a pinch of salt. Cook for 20–25 minutes until golden and caramelized.
  3. Season chicken with salt, pepper, and thyme. Sear both sides until golden brown, about 3–4 minutes per side.
  4. Stir in garlic and rice. Toast for 1–2 minutes.
  5. Add broth and Worcestershire sauce, scraping up browned bits.
  6. Return chicken to the pot. Bring to a simmer.
