Ingredients

1 pound ground beef

1 small onion, diced

3 cloves garlic, minced

2 tablespoons tomato paste

1 tablespoon Italian seasoning

1 can (28 ounces) crushed tomatoes

4 cups beef broth

8 lasagna noodles, broken into pieces

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

2 tablespoons chopped fresh basil or parsley

Salt and pepper to taste


Instructions

1. In a large Dutch oven over medium heat, cook ground beef with diced onion until browned. Drain any excess fat.

2. Stir in garlic and cook for another minute until fragrant.

3. Add tomato paste and Italian seasoning; stir well and toast for 2 minutes.

4. Pour in crushed tomatoes and beef broth. Stir to combine and bring to a boil.

5. Add broken lasagna noodles, reduce to a simmer, and cook for 12-15 minutes or until noodles are tender. Stir occasionally.

6. Season with salt and pepper.

7. Serve hot, topped with a scoop of ricotta, a sprinkle of mozzarella, and Parmesan. Garnish with fresh basil or parsley.

Notes

For a thinner soup, add 1 extra cup of beef broth during cooking.
