Ingredients

1 loaf of brioche or challah, sliced thick

6 large eggs

1 1/2 cups heavy cream

1/2 cup whole milk

1 tablespoon vanilla extract

1/2 teaspoon salt

1/2 cup granulated sugar (for custard)

1/4 teaspoon cinnamon (optional)

1/2 cup unsalted butter

1 cup brown sugar

2 tablespoons corn syrup

Extra granulated sugar for brulee topping


Instructions

  1. In a saucepan, melt butter with brown sugar and corn syrup. Pour into greased 9×13-inch dish.
  2. Layer bread slices over caramel mixture.
  3. In a bowl, whisk eggs, cream, milk, vanilla, salt, sugar, and cinnamon. Pour over bread.
  4. Cover and refrigerate overnight.
  5. The next day, preheat oven to 350°F. Bake uncovered for 40-45 minutes.
  6. Sprinkle granulated sugar on top and torch or broil until crisp.
