Ingredients

1 loaf brioche bread, sliced thick

4 eggs

1 cup heavy cream

1 cup whole milk

1 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup brown sugar

1/4 cup butter

1/4 cup granulated sugar (for topping)

Optional maple syrup, for serving

Optional berries, for serving


Instructions

1. Melt butter in a small saucepan and stir in brown sugar until bubbly. Pour into a greased 9×13-inch baking dish.

2. Layer brioche slices over the caramel mixture in a single snug layer.

3. In a bowl, whisk eggs, cream, milk, vanilla, and salt. Pour evenly over the bread.

4. Cover and refrigerate overnight or at least 6 hours.

5. Bring to room temperature for 30 minutes before baking. Preheat oven to 350°F.

6. Bake uncovered for 35–40 minutes until golden and set.

7. Sprinkle granulated sugar over the top and torch or broil until crisp and caramelized.

8. Let cool slightly, then serve with syrup or berries if desired.

Notes

Use day-old brioche for better custard absorption and less sogginess.

A kitchen torch gives the best brûlée topping, but broiling works in a pinch.
