1/2 teaspoon turmeric
1 teaspoon garam masala
1 teaspoon salt
2 tablespoons oil (for grilling)
2 tablespoons butter
1 teaspoon cumin seeds
1 cup tomato puree
1/2 teaspoon coriander powder
1/2 teaspoon chili powder
1/2 cup heavy cream
1 teaspoon kasuri methi (dried fenugreek leaves)
2 tablespoons chopped cilantro (for garnish)
Instructions
1. Mix Greek yogurt, ginger-garlic paste, red chili powder, turmeric, garam masala, and salt in a bowl. Add paneer and marinate for 30 minutes.
2. Heat oil in a skillet or grill pan and cook marinated paneer until golden brown. Set aside.
3. In a pan, melt butter and add cumin seeds. Sauté until aromatic, then stir in ginger-garlic paste and tomato puree. Cook until the oil separates.
4. Add coriander powder, chili powder, salt, and a bit of water. Cook until thickened.
5. Lower heat and add heavy cream and crushed kasuri methi. Simmer gently.
6. Add grilled paneer to the sauce and simmer a few more minutes. Garnish with cilantro before serving.
Notes
For extra depth, try grilling the paneer over an open flame for a smoky touch.
Don’t skip the kasuri methi – it gives the dish its signature aroma and flavor.
