Ingredients

4 medium potatoes (Russet or Yukon Gold)

3 tbsp butter, melted

½ cup grated Parmesan cheese

2 cloves garlic, minced

1 tsp salt

½ tsp black pepper

1 tsp dried oregano (or Italian seasoning)

¼ cup fresh parsley, chopped (for garnish)


Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Wash and dry the potatoes, then cut them in half lengthwise.
  3. In a small bowl, mix melted butter, minced garlic, salt, black pepper, and dried oregano.
  4. Brush the butter mixture generously over the cut sides of the potatoes.
  5. Sprinkle the grated Parmesan evenly over the potatoes, pressing gently to help it adhere.
  6. Place the potatoes cut-side down on the prepared baking sheet.
  7. Bake for 30-40 minutes, until the potatoes are tender and the cheese is golden and crispy.
  8. Remove from the oven and let cool for a few minutes.
  9. Garnish with fresh parsley and serve warm. Enjoy!
