Ingredients

1 cup creamy peanut butter

0.5 cup unsalted butter, softened

3.5 cups powdered sugar

1 teaspoon vanilla extract

2 cups semi-sweet chocolate chips

1 tablespoon coconut oil or shortening (optional)


Instructions

1. In a large bowl, beat together the peanut butter and softened butter until smooth.

2. Gradually add the powdered sugar and vanilla extract, mixing until a stiff dough forms.

3. Scoop out tablespoon-sized portions and roll them into balls. Place on a parchment-lined baking sheet. Freeze for 20–30 minutes.

4. Melt chocolate chips with coconut oil or shortening until smooth.

5. Use a toothpick to dip each ball 3/4 into the chocolate, leaving the top exposed.

6. Place back on the tray and chill until chocolate is firm.

7. Remove toothpicks and smooth tops if desired. Serve chilled or store.

Notes

Make sure the peanut butter is not oily or separated for best texture.

Chilling before dipping makes the process neater and helps chocolate set quickly.
