Ingredients

1 1/2 cups pecan halves

1/2 cup unsalted butter (for topping)

1 cup brown sugar

1/4 cup heavy cream

1 1/2 cups all-purpose flour

1 1/2 teaspoons baking powder

1 pinch salt

1/2 cup unsalted butter (for batter)

3/4 cup granulated sugar

2 eggs

1 teaspoon vanilla extract

1/2 cup milk


Instructions

1. Melt 1/2 cup butter, add brown sugar and heavy cream. Stir until smooth and bubbly.

2. Pour caramel into a greased 9-inch pan. Arrange pecan halves evenly over it.

3. In a bowl, whisk flour, baking powder, and salt.

4. In a separate bowl, cream 1/2 cup butter with sugar until fluffy.

5. Add eggs one at a time, then vanilla. Mix well.

6. Alternate adding dry mixture and milk into the creamed mixture. Mix just until combined.

7. Spoon batter over the pecan layer. Smooth it out gently.

8. Bake at 350°F for 35–40 minutes or until a toothpick comes out clean.

9. Let rest for 10 minutes. Invert onto a plate and serve warm.

Notes

Don’t overmix the batter – it’ll stay fluffier and lighter that way.
