Ingredients

2 cups chocolate cookie crumbs

16 oz cream cheese, softened

1 cup powdered sugar

1 1/2 cups heavy whipping cream

1 tsp peppermint extract

1 drop red gel food coloring

1 cup whipped cream, for topping

2 tbsp crushed candy canes, for garnish


Instructions

1. Crush chocolate cookies and divide about 2 tablespoons into each serving cup, pressing down gently to form a base.

2. Whip the heavy cream in a large bowl until stiff peaks form, then set aside.

3. In another bowl, beat cream cheese and powdered sugar until smooth. Add peppermint extract and food coloring, mixing well.

4. Gently fold whipped cream into the cream cheese mixture until fluffy and well combined.

5. Spoon or pipe mousse mixture over the cookie base in each cup and smooth the top.

6. Garnish with whipped cream, crushed candy canes, and optional mini peppermint sticks.
