Ingredients

4 slices of sourdough or thick sandwich bread

1 cup shredded mozzarella cheese

1/2 cup shredded sharp cheddar cheese

1620 slices of pepperoni

4 tablespoons pizza sauce

2 tablespoons unsalted butter (softened)

Optional: dried oregano, garlic powder, or chopped parsley for garnish


Instructions

  1. Gather and prep all ingredients. Grate cheese, soften butter, and set up your station.
  2. Lay out bread slices and spread a layer of pizza sauce on the inside of each.
  3. Layer mozzarella and cheddar onto two slices, then top with pepperoni slices.
  4. Close with remaining bread, sauce side facing in.
  5. Butter the outer sides of each sandwich generously.
  6. Heat a nonstick skillet over medium heat.
  7. Grill sandwiches 3–4 minutes per side, pressing with a spatula until golden and cheese is melted.
  8. Remove, rest for 1 minute, slice, and serve with extra pizza sauce if desired.
