Perfect Turkey Kabobs are one of my favorite easy dinner ideas when I want something colorful, juicy, and packed with fresh flavor. Tender chunks of marinated turkey are threaded with bell peppers, red onion, and zucchini, then grilled until lightly charred and beautifully golden. This easy recipe is perfect for a quick dinner, healthy lunch prep, summer cookouts, family meals, and simple food ideas that feel both light and satisfying.
Ingredients
1 1/2 pounds turkey breast, cut into 1 1/2-inch cubes
3 tablespoons olive oil
2 tablespoons lemon juice
3 cloves garlic, minced
1 teaspoon paprika
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
1 red bell pepper, cut into chunks
1 yellow bell pepper, cut into chunks
1 medium red onion, cut into chunks
1 medium zucchini, sliced into thick rounds
Instructions
1. In a large bowl, whisk together the olive oil, lemon juice, garlic, paprika, oregano, salt, and black pepper.
2. Add the turkey cubes and toss well to coat. Cover and refrigerate for 30 minutes.
3. Cut the bell peppers, onion, and zucchini into even pieces.
4. Thread the turkey and vegetables onto skewers, alternating ingredients.
5. Preheat the grill to medium-high heat and lightly oil the grates.
6. Grill the kabobs for 10 to 12 minutes, turning every few minutes, until the turkey is fully cooked and the vegetables are tender.
7. Let the kabobs rest for 3 minutes before serving.
Notes
Do not overcook the turkey, because turkey breast is lean and can dry out quickly once it goes past doneness.
