This Pesto Mediterranean Flatbread Pizza is the kind of easy recipe that feels special the moment it hits the table. Crisp flatbread, herby pesto, melty mozzarella, tangy feta, artichoke hearts, olives, and juicy cherry tomatoes come together in a fresh and flavorful bite that works for a quick lunch, easy dinner, healthy snack, or party appetizer. It is one of my favorite food ideas when I want simple Mediterranean flavors, fast prep, and a colorful meal that looks impressive without much effort.
Ingredients
1 flatbread or naan
1/3 cup basil pesto
1 cup shredded mozzarella cheese
1/2 cup crumbled feta cheese
1 cup marinated artichoke hearts, drained and chopped
1/2 cup cherry tomatoes, halved
1/4 cup sliced red onion
1/4 cup sliced Kalamata olives
1 cup fresh arugula
1 tablespoon olive oil
1/2 teaspoon Italian seasoning
1/4 teaspoon black pepper
Instructions
1. Preheat the oven to 425°F and place the flatbread on a baking sheet or pizza pan.
2. Spread the pesto evenly over the flatbread, leaving a small border around the edges.
3. Sprinkle the mozzarella over the pesto, then add the feta cheese.
4. Scatter the artichoke hearts, cherry tomatoes, red onion, and Kalamata olives across the top.
5. Drizzle with olive oil and season with Italian seasoning and black pepper.
6. Bake for 10 to 14 minutes, until the edges are golden and the cheese is melted.
7. Remove from the oven, top with fresh arugula, slice, and serve warm.
Notes
Do not overload the flatbread with wet toppings, or the crust can turn soft instead of crisp.
