Ingredients

1 lb ground chicken

1 tablespoon olive oil

3 cloves garlic minced

1 tablespoon fresh ginger minced

1 cup water chestnuts finely chopped

3 green onions sliced

1/4 cup hoisin sauce

3 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1/4 teaspoon salt

1/4 teaspoon black pepper

1 head butter lettuce leaves separated and washed

1 tablespoon sesame seeds optional


Instructions

1. Wash and carefully separate the butter lettuce leaves. Pat dry and set aside.

2. Heat olive oil in a large skillet over medium heat.

3. Add ground chicken and cook until browned, breaking it apart with a spoon, about 5–7 minutes.

4. Stir in minced garlic and ginger. Cook for 1 minute until fragrant.

5. Add chopped water chestnuts and cook for 2–3 minutes.

6. Whisk together hoisin sauce, soy sauce, rice vinegar, sesame oil, salt, and black pepper in a small bowl.

7. Pour the sauce into the skillet and stir well. Simmer for 2–3 minutes until slightly thickened.

8. Remove from heat and stir in sliced green onions.

9. Spoon the chicken mixture into lettuce cups and garnish with sesame seeds if desired. Serve immediately.

Notes

Do not overcook the chicken mixture. Cooking too long after adding the sauce can dry out the filling instead of keeping it juicy and flavorful.
