Ingredients

1 lb steak tips or thinly sliced sirloin

2 tablespoons olive oil

1 small yellow onion, finely chopped

1 small red bell pepper, diced

1 clove garlic, minced

Salt and pepper to taste

9 oz refrigerated cheese tortellini

1 cup beef broth

1/2 cup heavy cream

1 cup shredded provolone or mozzarella cheese

Fresh chopped parsley for garnish (optional)


Instructions

  1. In a large skillet over medium-high heat, heat olive oil and sear steak tips with salt and pepper until browned, about 4-5 minutes. Remove and set aside.
  2. Add chopped onions and diced bell pepper to the skillet; cook for 3-4 minutes. Stir in garlic and cook for another 30 seconds.
  3. Pour in beef broth and bring to a simmer. Add tortellini, cover, and cook for 4-6 minutes or until pasta is tender.
  4. Reduce heat to low. Stir in heavy cream and shredded cheese until melted and creamy.
  5. Return steak to skillet, mix everything together, and heat through.
