Ingredients

2 cups cooked chicken breast or thighs, shredded

1 cup red bell pepper, sliced

1 cup yellow bell pepper, sliced

1 cup green bell pepper, sliced

1 medium yellow onion, sliced

1 tablespoon taco seasoning

2 cups cooked white rice

1 can (10 oz) diced tomatoes with green chilies

4 oz cream cheese

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1 fresh jalapeño, sliced (optional)


Instructions

1. Sauté sliced bell peppers and onions in a skillet over medium-high heat until tender and slightly charred.

2. Stir in shredded chicken and taco seasoning, mixing well.

3. Add diced tomatoes with green chilies and cream cheese. Stir until creamy and blended.

4. Spread cooked rice evenly in a greased 9×13-inch baking dish.

5. Pour the chicken mixture over the rice and smooth it out.

6. Top with shredded cheddar and Monterey Jack cheese.

7. Garnish with sliced jalapeños if using.

8. Bake at 375°F (190°C) uncovered for 20–25 minutes until cheese is bubbly.
