Ingredients

2 cups fresh strawberries (hulled and halved) or frozen strawberries, thawed

1 cup granulated sugar

1 tablespoon lemon juice (freshly squeezed)

1 teaspoon lemon zest (optional)

1/4 teaspoon salt

Instructions

  1. Rinse, hull, and slice the strawberries. If frozen, thaw and drain them. Lightly mash with a fork or potato masher.
  2. In a saucepan, combine the strawberries, sugar, lemon juice, lemon zest (if using), and salt. Stir to coat well.
  3. Bring to a simmer over medium heat, stirring often. Let cook for 15–20 minutes until thickened.
  4. To test readiness, place a bit of jam on a chilled plate. If it wrinkles when pushed, it’s done.
  5. Let the jam cool for 10–15 minutes, then transfer to a clean jar or container.
  6. Store in the refrigerator for up to 3 weeks or freeze for up to 3 months.
