Ingredients

1 pound ground turkey

1 tablespoon olive oil

1 tablespoon taco seasoning

1 cup cooked rice

1/2 cup black beans (drained and rinsed)

1/2 cup corn (canned or frozen)

1/2 cup shredded cheddar cheese

1 cup chopped lettuce

1/2 avocado, sliced

1/4 cup salsa

1/4 cup sour cream

Fresh cilantro (optional garnish)

Lime wedges (for serving)

Instructions

1. Cook the rice according to package directions and set aside.

2. In a skillet over medium heat, add olive oil and cook ground turkey until browned.

3. Stir in taco seasoning with a splash of water and let it simmer for 2–3 minutes.

4. While the turkey cooks, prepare all your toppings: chop lettuce, slice avocado, shred cheese, and gather salsa, sour cream, and other toppings.

5. Assemble your bowl: layer rice at the bottom, then add ground turkey, black beans, corn, lettuce, avocado, salsa, shredded cheese, and sour cream.

6. Garnish with cilantro and lime wedges, and serve immediately.

Notes

For a lower-carb version, swap regular rice with cauliflower rice.

Add jalapeños or hot sauce if you prefer a spicy kick.
