Ingredients

1 pound ground beef

1 cup long grain white rice

1 red bell pepper, chopped

1 green bell pepper, chopped

2 stalks celery, chopped

1 small onion, diced

3 cloves garlic, minced

2 tablespoons Cajun seasoning

2 cups chicken broth

2 green onions, chopped (for garnish)

2 tablespoons fresh parsley, chopped (for garnish)


Instructions

1. Heat oil in a large skillet over medium heat. Sauté onion, celery, and bell peppers for 5–6 minutes until softened.

2. Add ground beef to the skillet, breaking it apart as it cooks. Brown thoroughly and drain excess fat.

3. Stir in minced garlic and Cajun seasoning. Cook for 1–2 minutes until fragrant.

4. Add uncooked rice and chicken broth. Stir well to combine.

5. Bring to a boil, then reduce heat to low. Cover and simmer for 18–20 minutes, or until rice is tender.

6. Fluff with a fork and garnish with green onions and parsley before serving.

Notes

For extra depth, you can substitute half the beef with chopped chicken livers (traditional in classic dirty rice).
