Tender potatoes are tossed with crisp cucumber, juicy tomatoes, red onion, olives, feta, and a bright lemon dressing for a healthy side dish that feels both light and satisfying. Ingredients
1 1/2 pounds baby potatoes
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/4 cup red onion, thinly sliced
1/2 cup Kalamata olives, halved
1/2 cup feta cheese, crumbled
2 tablespoons fresh parsley, chopped
3 tablespoons olive oil
2 tablespoons fresh lemon juice
1 tablespoon red wine vinegar
2 cloves garlic, minced
1 teaspoon dried oregano
3/4 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Wash the baby potatoes and cut any large ones in half.
2. Place the potatoes in a pot of salted water and boil for 12 to 15 minutes, or until fork-tender.
3. Drain the potatoes and let them cool slightly.
4. In a large bowl, whisk together the olive oil, lemon juice, red wine vinegar, garlic, oregano, salt, and black pepper.
5. Add the warm potatoes to the bowl and toss gently to coat them in the dressing.
6. Fold in the cherry tomatoes, cucumber, red onion, and Kalamata olives.
7. Sprinkle in the feta cheese and chopped parsley.
8. Toss lightly, taste, and adjust seasoning if needed.
9. Serve slightly warm, at room temperature, or chilled.
Notes
Do not overcook the potatoes, or they can fall apart when you toss the salad and turn the texture mushy instead of pleasantly tender.
