Ingredients

1 tbsp olive oil

1 medium onion, chopped

2 carrots, sliced

2 celery stalks, sliced

1 green bell pepper, chopped

3 garlic cloves, minced

1/2 large head cabbage, chopped

1 can (14.5 oz) diced tomatoes

6 cups vegetable broth

1 tsp Italian seasoning

1/2 tsp paprika

1 tsp salt

1/2 tsp black pepper

2 tbsp fresh parsley, chopped


Instructions

1. Heat the olive oil in a large soup pot over medium heat.

2. Add the onion, carrots, celery, and bell pepper, then cook for 5 to 6 minutes until they begin to soften.

3. Stir in the garlic, Italian seasoning, paprika, salt, and black pepper, and cook for 30 seconds.

4. Add the chopped cabbage and diced tomatoes, then stir well.

5. Pour in the vegetable broth and bring the soup to a gentle boil.

6. Reduce the heat to low and simmer for 25 to 30 minutes until the vegetables are tender.

7. Stir in the fresh parsley just before serving.

8. Ladle into bowls and serve hot.

Notes

Do not boil the soup too hard once all the vegetables are added, or the cabbage can become overly soft and lose its fresh texture.
