Ingredients
1 cup unsalted butter, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1 1/2 cups all-purpose flour
1/2 cup almond flour
1/4 teaspoon salt
1/3 cup raspberry jam
1 cup powdered sugar, for coating
Instructions
1. Cream together the butter and powdered sugar until light and fluffy.
2. Mix in the vanilla and almond extracts.
3. Add the all-purpose flour, almond flour, and salt. Mix until combined.
4. Scoop about 1 tablespoon of dough, flatten, and add a small amount of raspberry jam in the center. Seal and roll into a ball.
5. Place dough balls on a parchment-lined baking sheet.
6. Bake at 350°F for 12–14 minutes until lightly golden underneath.
7. While warm, roll the cookies in powdered sugar.
8. Let cool completely, then roll in powdered sugar again before serving.
Notes
Make sure the raspberry jam is thick to avoid leakage.
For best powdered sugar coating, roll cookies once warm, then again after they’ve cooled.
