Ingredients

1 lb chicken thighs

2 cups cremini mushrooms, sliced

2 cloves garlic, minced

1 medium onion, diced

3 tbsp butter

2 tbsp all-purpose flour

1 cup chicken broth

1/2 cup sour cream

1/2 cup heavy cream

1 tsp Dijon mustard

1/2 tsp salt

1/4 tsp black pepper

2 tbsp fresh parsley, chopped (optional)


Instructions

1. Season chicken thighs with salt and pepper. Sear in butter over medium-high heat until golden and cooked through. Set aside.

2. In the same skillet, cook onions until translucent. Add mushrooms and garlic; sauté until golden.

3. Sprinkle flour over vegetables and cook for 1 minute. Slowly whisk in chicken broth until smooth and slightly thickened.

4. Lower heat and stir in sour cream, heavy cream, and Dijon mustard. Mix until smooth and creamy.

5. Return chicken to skillet and simmer for 5–10 minutes until sauce thickens and coats the chicken.

6. Garnish with parsley and serve over mashed potatoes, noodles, or rice.

Notes

For an extra rich sauce, add a splash of white wine after sautéing the mushrooms.

Avoid boiling the sauce after adding dairy to prevent curdling.
