Ingredients

Salad Base:

1 medium head cauliflower, cut into florets

12 tablespoons olive oil

1 ripe avocado, sliced

4 cups kale or mixed greens, chopped

1/2 cup plant-based or regular crispy bacon, crumbled

Salt and black pepper to taste

Green Goddess Dressing:

1/2 cup Greek yogurt or vegan yogurt

1 small garlic clove

1 tablespoon lemon juice

1 tablespoon olive oil

1 tablespoon white wine vinegar

1/2 ripe avocado

1/4 cup fresh parsley

1/4 cup fresh cilantro

2 tablespoons chopped chives or green onion

Salt and pepper to taste


Instructions

  1. Roast the cauliflower: Preheat oven to 425°F (220°C). Toss cauliflower florets with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until golden and crispy.
  2. Make the dressing: Blend all dressing ingredients in a food processor until smooth. Adjust seasoning to taste.
  3. Prepare greens: Add chopped kale or mixed greens to a large bowl. Massage kale with olive oil if using.
  4. Assemble: Add roasted cauliflower, avocado slices, and crispy bacon to the greens. Drizzle with green goddess dressing.
