Ingredients

4 medium sweet potatoes, cut into wedges

2 tbsp olive oil

1½ tsp fresh rosemary, chopped (plus sprigs for garnish)

½ tsp garlic powder

Salt to taste

Freshly ground black pepper to taste


Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash sweet potatoes and cut them into 1-inch thick wedges.
  3. In a large bowl, toss wedges with olive oil, rosemary, garlic powder, salt, and pepper.
  4. Spread wedges in a single layer on the baking sheet.
  5. Roast for 25–30 minutes, flipping halfway, until edges are golden and centers are tender.
