Ingredients

8 roma tomatoes

4 garlic cloves

1 medium yellow onion

2 tablespoons olive oil

2 cups vegetable broth

1 teaspoon fresh thyme leaves

1 tablespoon fresh basil

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup heavy cream (optional)


Instructions

1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Halve roma tomatoes and place them on the baking sheet with garlic cloves (skin on) and sliced onion. Drizzle with olive oil, sprinkle salt and pepper, and roast for 30–35 minutes.

3. Remove garlic skins and transfer all roasted vegetables to a large pot. Add vegetable broth, thyme, and basil.

4. Simmer for 10 minutes, then blend with an immersion blender or in batches in a countertop blender.

5. Stir in heavy cream if using, and heat through gently.

6. Ladle into bowls, garnish with herbs or roasted tomato slices, and serve hot.

Notes

Roast the garlic in its skin to prevent it from burning and to bring out its sweetness.

For a spicy twist, add a pinch of red pepper flakes while simmering.
