0.5 cup butter

0.5 cup brown sugar

1 cup molasses

1 large egg

2 cups all-purpose flour

1.5 teaspoons baking soda

1 teaspoon cinnamon

0.5 teaspoon ground cloves

0.5 teaspoon ground ginger

0.25 teaspoon salt

1 cup hot water


Instructions

1. Cream together butter and brown sugar until light and fluffy.

2. Mix in molasses and beat in the egg until well combined.

3. In a separate bowl, whisk together flour, baking soda, cinnamon, cloves, ginger, and salt.

4. Gradually mix dry ingredients into the wet mixture.

5. Stir in the hot water slowly until the batter is smooth.

6. Spoon batter into greased or lined muffin tins, filling each about 2/3 full.

7. Bake at 350°F (175°C) for 18–22 minutes or until a toothpick inserted in the center comes out clean.

Notes

Avoid using blackstrap molasses for this recipe—it can be too bitter.
